This potato rosti recipe, with chorizo, tomatoes and fried eggs is an excellent dish that is one of our favourites.
- 3 Medium sized potatoes
- Half a white onion
- 1 Tsp Paprika
- 2 Tbsp Olive Oil
- 1 Tbsp butter
- 3 Eggs
- 50g Spinach (wilted and drained)
- Handful cherry tomatoes (halved)
- 3 Picante chorizo sausages
- 1 Spring onion
Add your cherry tomatoes to a small oven dish, season with salt and pepper and place in the oven at 180C for 20 mins.
Peel the potatoes and then grate them along with the onion into a colander with a bowl underneath to catch any moisture. Add the paprika and season with salt and pepper then squeeze the mixture to remove the excess liquid. Once you're happy with the consistency, add your cheese and mix well.
Add your mixture to a hot pan and spread it, then push down using a spoon so its nice and compact and the edges are tidy.
Cook for roughly 5 minutes until golden. Once the bottom is crispy, transfer it onto a plate, plate another plate on top and flip it over so the rosti is upside down then slide this back into the pan. Cook for another 5 minutes and as it cooks, put small pieces of the butter around the edges so it sinks underneath. For the eggs, cook as you like.
Once your rosti is ready, top it with your wilted spinach then your eggs of choice. Finish with a scattering of the sausage and tomatoes and finish with finely sliced spring onion.
