Succulent Honey Mustard Chicken.
- 4-5 Chicken Thighs
- 1 tbsp garlic powder
- 1 tbsp garlic, chopped
- 1 tablespoon olive oil
- 1/4 cup honey
- 3 tbsps wholegrain mustard
- 2 tbsps water
- 3 large new potatoes, quartered
- 2 sprigs rosemary
- 1 large lemon, squeezed
- Black pepper/salt to season
Preheat oven to 200°C. In a large bowl, season chicken with salt, pepper & garlic powder.
Heat olive oil in an oven-proof non stick pan over medium heat and cook the chicken thighs for around 4 minutes on each side until the skin becomes golden. Leave 2 tbsps of chicken juices (for flavour) in the pan and drain the rest.
Add the chopped garlic in the same pan for 1 minute. Then add the honey, mustard, lemon juice and water to the pan. Make sure to mix the chicken in the sauce.
Add the potatoes into the sauce and season with salt and pepper. Let the honey mustard sauce now simmer for 3 minutes.
Transfer the pan into to the oven and bake for 45 minutes until the chicken is coated in the sauce and completely cooked through.
